What is high hydration bread?

It is a bread baked from a dough with more water than usual, and it is characterized by a moist and chewy texture.

When baked, it is crispy on the outside and fluffy on the inside, and it is a simple delicious taste that can be eaten every day without getting bored.

No addition

Don't put in unnecessary things

No sugar, no eggs, no dairy products, no oil. No additives are used.

The dough is made with only 5 ingredients and water, mainly domestic flour.

Raw materials (basic fabric)

1 Wheat flour (Hokkaido and Canada) and 2 Domestic rice flour (Miyazaki Prefecture)

3 natural salt, 4 malt syrup, 5 baker's yeast

(Some of it contains wheat)

※Emulsifiers and flavorings are used in chip chocolate, which is the raw material of chocolate bread.

Nutritious

The main use is a strong flour with a strong taste (ground gurumi) that is used to the part close to the outer skin.

It is also rich in protein, vitamins and minerals.

With rice flour

We use rice from Miyazaki Prefecture, Kyushu, which is made without the use of pesticides as much as possible.

I added rice flour to the beginning because I wanted my daily diet not to be biased towards wheat,

By adding rice flour, the fullness has increased, making it a more flavorful bread.

Zero food loss

We use rice from Miyazaki Prefecture, Kyushu, which is made without the use of pesticides as much as possible.

The remaining bread is replaced with rusks and croutons.

Bread → Rebake → Rusk → Rospan Zero

The coarseness of the hollow texture of the multi-hydrated bread creates a crisp texture and makes it a unique rusk.

We don't throw away any of the bread we made.
